An immediate 10% saignée, into a 4-day cold soak at 58°F, inoculated to convert 100% sugar over 14 days at <=88°F, pressed at negative Brix straight to 40% new French Oak where primary fermentation finished and ML completed. Racked once over 14 months aging.

Meticulously cluster sorted 100% Clone 23 (Mariafeld), de-stemmed to berry shaking table and to tank with 15% whole cluster. Immediate 25% saignée, 3-day cold soak at 60°F, yeast converted sugar over 16 days at <=88°F, post-macerated on skins, pressed at negative Brix straight to 60% new French Oak where primary fermentation finished and ML completed. Racked once over 17 months aging.

Immediate 15% saignée, 5-day cold soak at 56°F, yeast converted sugar over 18 days at <=87°F, post-macerated on skins, pressed at negative Brix straight to 70% new French Oak where primary fermentation finished and ML completed. Aged 17 months.

Immediate 10% saignée, 5-day cold soak at 57°F, yeast converted sugar over 15 days at <=86°F, pressed at negative Brix straight to 55% new French Oak where primary fermentation finished and ML completed. Racked once over 18 months aging.

Meticulously cluster sorted, de-stemmed to berry shaking table, and optically sorted. Immediate 15% saignée, 5-day cold soak at 55°F, yeast converted sugar over 19 days at <=88°F, pressed at negative Brix straight to 75% new French Oak where primary fermentation finished and ML completed. Racked three times over 21 months aging.
